Harvest: by hand, with 15-kilo boxes Monitoring of ripening: phenolic ripening criteria Entry into cellar: via a small stemmer Vinification: 5,000-litre stainless steel containers with temperature control. Cold pre-maceration. Alcoholic fermentation at 28ºC. Maceration 25-30 days. Malolactic fermentation. Ageing: 12 months Barrels: 100% French, 1st year Selection of barrels: after barrel-by-barrel tasting, barrels which do not reach the necessary levels of quality are separated out. Alcohol content: 14% |
