Harvest: by hand, with 15-kilo boxes Monitoring of ripening: phenolic ripening criteria Entry into cellar: via a small stemmer Vinification: 5,000-litre stainless steel containers with temperature control. Cold pre-maceration. Alcoholic fermentation at 28ºC. Maceration 25 days. Malolactic fermentation. Ageing: 12 months Barrels: 50% French, 50% American (new barrels: 34% 1st year, 33% 2nd year and 33% 3rd year). Selection of barrels: after barrel-by-barrel tasting, barrels which do not reach the necessary levels of quality are separated out. Alcohol content: 14% |
