red "guarda" 00

a blend of red Grenache, Carignan and Cabernet Sauvignon grapes from old vineyards. Aged for 12 months in barrels of new French and American oak.

 

"vi de guarda", is the phrase used in the Priorat to describe wines which have been aged for at least 12 months in oak barrels.

Vineyards: This wine is not made from vineyards which are selected every year on the basis of quality criteria. At every harvest the finest Carinyena, Cabernet and Garnatxa grapes from our own old vines are selected. Thus, our over 300 vineyards can offer a fine reflection of the diversity and high quality of the grapes from our vines and from the Priorat itself.

Entry into cellar: via a small stemmer
Vinification: 5,000-litre stainless steel containers with temperature control. Cold pre-maceration. Alcoholic fermentation at 28ºC. Maceration 25 days. Malolactic fermentation.
Ageing: 12 months
Barrels: 50% French, 50% American (new barrels: 34% 1st year, 33% 2nd year and 33% 3rd year).
Selection of barrels: after barrel-by-barrel tasting, barrels which do not reach the necessary levels of quality are separated out.
Alcohol content: 14%
